Dinner, Dessert and ... well, Happy Valentines Day 💜🧡

I love food! .. and this here is a celebration of that love :-D .. A couple of special tweaks in the recipes and you will see how they elevate the ingredients used to a level that I think competes with restaurant quality food :-) I love combining recipes and turning them low carb and keto. I think the clever work from the leading names is already out there so why not make it work for us?!

Its steak and chips as your main event with beautifully tasty sides and a luscious dessert that takes naughty to a new level 😈

The instructions below are not in chronological order to prepare the food, so if you are planning ahead, then start with the dessert the day before, or a couple hours before the meal so it sets nicely.

 

The main event: 

For the steak: 

225g per person dry aged ribeye steak - these are from Aldi, left at room temperature for 40 minutes. dusted with salt, pepper and a bit of garlic powder

50g cacao butter - YES you heard that right, its our first special ingredient!

Smashed garlic and fresh thyme for flavouring

For the chips:

Half a head of celeriac cut into oversized chunky chips (I really mean oversized as they shrink on cooking!) 

Beef dripping - lots! YES!! it takes these chips to another level :-D

 

For the sides;

Chilli zesty creamy mushrooms: 

200g button mushrooms

3 cloves of garlic, sliced

1 green chilli, lemon juice

30g butter at room temperature, 2tbsp olive oil

Salt and pepper

Creamy Stilton sauce:

100g Stilton or any other blue cheese

50g cream cheese

25g butter at room temperature

1tbsp double cream

Salt and white pepper

 

For the dessert - decedent tiramisu: 

Low carb 'savoiardi' fingers:

10g arrowroot, 16g bamboo fibre (or coconut flour), yes bamboo lol its new to me, but it really is worth looking into.. coconut flour (I tested this before with groovy foods organic flour and it works well)

2 eggs separated, vanilla essence,  lemon juice and zest

Crema:

Ricotta cheese 200g, Clotted cream 100g - it just gets better doesn't it!

1 egg separated, vanilla extract

espresso shot, orange oil / essence, zest

 

Method:

Chips

  1. Start with the chips as they take longest; preheat your oven to its highest temperature and place the dripping into a heat resistant deep enough tray to use as a deep fryer.
  2. Shop half a head of celeriac should give you 4 discs and you will make 4 or 5 chips from each disc.
  3. Parboil the chips in salted water for 10 minutes and drain and let steam dry
  4. The oven and oil in it should be ready now. Cautiously add the chips one be one using tongs into the really hot oil and then leave them to cool . Depending on the temperature of the oven cooking time is 30min or more
  5. Carefully remove from oven moments before serving and salt generously to help them maintain the crunch remain 

Mushrooms

  1. Clean and slice the mushroom and fry them in olive oil with a smashed garlic. Heat needs to be high enough to  not boil them - you need the water released to evaporate and not stay. You can get them toasty and pause the cooking process 
  2. When you are ready to serve, heat on high as it sizzles, add in the butter and quickly whisk it around and squeeze in the lemon juice, this should turn the lot into the creamiest dreamiest mushrooms. Dump the chillis on after you take of heat to serve then decorate with a handful of finely chopped parsley 

Stilton Sauce

  1. You also need to be strategic with this one, again you can take it so far and leave the last step just before serving. Cube up the cheese and place in a non-stick saucepan on medium heat to melt.
  2. Add in the cream cheese and butter and combine. You can stop here once it all amalgamates, keep warn on lowest heat
  3. Just before serving, dress with salt and white pepper and drizzle the cream in and combine.

Steak

  1. Not much to instruct here! .. cook them to your liking! Just use that cacao butter and a smashed garlic clove and maybe some fresh thyme in the process. These babies took 3.5 minutes on each side with 5 minute resting time. It helped that they were seasoned and at room temperature before hand.
  2. The fat from the steaks can also dress the mushrooms for an extra edge 

Tiramisu

  1. Starting with the fingers; whisk yolk, vanilla and zest until very creamy and silky
  2. In a second container whisk the whites with 1tsp lemon juice until its a stiff meringue
  3. In a third container sift together the dry ingredients 
  4. Fold half the whites mix into the yolk mix gently.
  5. Fold in the flour mix 1tbsp at a time 
  6. Fold in the last half of whites
  7. Spoon the mixture on a parchment lined tray and bake for 8 minutes in preheated oven at 200C static (not fan) 
  8. Let cool while you do the rest
  9. For the crema: add yolk in a bowl and whisk well. add in cheese, cream and vanilla
  10. In a separate bowl make some more meringue with the whites.
  11. Fold whites into crema gently
  12. Now the fingers are cool, dip them in coffee, here is where the choice is yours. I added orange oil in the coffee, but you can use a liquor for this if you wish, but watch the sugar!
  13. Quickly dip the fingers in the coffee
  14. Line them in the serving bowl
  15. Cover with a layer of crema
  16. Repeat the dipping again and cover with crema making a second layer
  17. Dust with unsweetened cacao and some zest to decorate and let set in fridge for a few hours before serving!
